Chef Alex Seidel: Owner, Fruition Restaurant, Mercantile dining & provision, Füdmill & Chook

Alex Seidel is chef-owner of Fruition Restaurant, Mercantile dining & provision, Füdmill and Chook (opening Fall 2018). Zagat has named Fruition the number one restaurant in Colorado every year since it opened. 5280 Magazine included Fruition in its list of 25 Best Restaurants every year the ranking has run. Seidel himself has been the recipient of many accolades, including Food & Wine magazine’s Best New Chef in 2010, Chef of the Year titles from local media including Denver Magazine and 5280. Seidel was awarded the 2018 James Beard Foundation Best Chef: South West. In addition to his restaurants, Seidel owns Fruition Farms Creamery, Colorado’s first artisan sheep’s milk creamery, located in Larkspur, Colorado.

Seidel participates in numerous off-site events for both charitable and fine dining experiences. He very much enjoys furthering the culture of cuisine all the while staying down to earth and championing such causes as food advocacy, mindfulness when it comes to eating habits and waste. Becoming a chef and a business owner has allowed him to hone his very impressive skills while controlling the ingredients and the sourcing of his provisions.

What do you love most about Your City?

The people are down to Earth and hospitable, the weather, the activities…I can’t name just one thing.

Favorite breakfast meal & restaurant?

For me it used to be a diet Mountain Dew (not anymore!).  I don’t eat breakfast often but I love a good eggs benedict. Snooze is my favorite.

What are you doing at:

6:00 AM – Start looking at my emails before getting out of bed.

10:00 AM - I’m usually at meetings between my places: Fruition Restaurant, Mercantile, Füdmill and Chook.

12:00 PM - Favorite Power Lunch spot/meal?

Safta. The hummus and salatim bring a variety of flavors and textures all consumed with a wood fired pita.

7:00 PM - Traveling on Lincoln/Broadway between Fruition and Mercantile’s dinner services.

11:00 PM - Winding down with a glass of wine and checking into what may have happened in the world.

What drink do you need to get through the day and at the end (and how many)?

I drink Pellegrino all day from AM to PM. I travel with a little cooler filled with ice to keep me quenched for the day. When it comes to a wind down, I don’t judge…wine, beer or spirits

What should everyone try at least once?

Mushroom foraging-what a high.

Where do you enjoy getting lost?

Anywhere there are waves Cerritos Beach Mexico is a favorite destination.
