Born and raised in Potsdam, New York, David Gibbs left home to attend college in Boston before pursuing his passion for music with band, Gigolo Aunts. Spending his 20’s and 30’s touring with the band, Gibbs quickly discovered a new passion: wine. Relocating to Los Angeles, California, and wanting to spend more time with his family, Gibbs decided to further explore his passion for wine and dive head first into the industry. Drawing inspiration from friends and future partners, Matthew Kaner, Dustin Lancaster and Andy Paxson, who had their own businesses at the time, Gibbs studied to become a member of the Court of Sommeliers in XX, in order to open his own wine bar.
In 2015, Gibbs, alongside partners Kaner and Lancaster, opened his first concept, Augustine Wine Bar, in Sherman Oaks, California, quickly earning praise as one of Food & Wine Magazine’s best 10 Wine Bars in the U.S. Following its success, Gibbs continued his exploration in the industry, opening Mirabelle Wine Bar located east of Sherman Oaks in Valley Village, California, in early 2018. In August 2018, Gibbs decided it was time to marry his passion for great wine with great food, opening sushi and wine concept, Sushi Note, alongside Paxson and Augustine Wine Bar’s Silvia Gallo. Located across from Augustine Wine Bar, Sushi Note offers authentic Japanese cuisine with an extensive, globally sourced wine collection.
What do you love most about Your City?
“Opportunity. LA is truly a city of opportunities. Every day can be different in so many ways, it’s hard to get bored here. I don’t know anywhere else in the world where one’s fortune can change as quickly. Also- I happen to love sunshine, so this is a good fit for me.”
Favorite breakfast meal & restaurant?
“I eat a quick breakfast at home, usually 3 shots of espresso over ice with a splash of 2%, and a bagel. Although lately I’ve been drinking these all natural “meal replacement” type shakes I ordered from Instagram (I know…I’m a sucker for those dumb video ads), and they’re really tasty! Can’t remember the name though. Something with a K?”
What are you doing at:
6:00 AM – “Getting up, listening to my kids goofing around downstairs, and thinking about caffeine.”
10:00 AM – “Maintenance at one of the bar/restaurants I’m involved with. I can’t remember a single day in the past 4 years when something hasn’t needed attention /repair. And it’s often the not-so-glamorous stuff…clogged toilets, peeling gum from under the tables, putting away linens, cleaning votive holders etc…but I actually don’t really mind it. Keeps me connected to the physical spaces, and I like that. It’s also kinda funny to realize just how handy you become when you have the choice of paying someone to do it, or figuring out how to do it yourself ;) ”
12:00 PM - Favorite Power Lunch spot/meal?
“I don’t eat lunch often enough, so I don’t really have a favorite spot, but I do like the tacos at Home State, or pizza from Santinos on Woodman, which pretty much rules."
7:00 PM – “Probably saying goodnight to my kids and heading in to either Augustine, Sushi Note, or Mirabelle. I like to check in with the staff, and say hello to regulars. And it’s always good to watch service during the busiest part of the night to see what’s working, or where we need to do better. Especially in a place like Sushi Note that is brand new.”
11:00 PM – “Honestly…I’m usually in bed, and most likely asleep by this time. I know that’s boring, and not very cool, but my kids get me up early, and I like to get as much done as possible in the morning.”
What drink do you need to get through the day and at the end (and how many)?
“Water. All day, every day. So I pee a lot.”
Most used App/Favorite Instagram Account?
“Most used App by FAR is Reminders, followed by Notes. I use them throughout the day to attempt to be less of a flake, and actually follow through on all the stuff I’m supposed to be doing. For instance, as I’m typing this, Reminders just flashed on my phone telling me I have a conference call in 10 minutes, and that I need to get fresh flowers for the tables at Sushi Note before 4pm. My guess is most people are probably a little more organized and don’t need them, but they really help me a lot.”
What should everyone try at least once?
“Washing dishes in a restaurant. Really. Tiring, repetitive, hot, wet and seemingly never-ending, it’s incredibly hard, and arguably the most important job. And it makes you truly realize how valuable every position is in a restaurant.
I really believe if more people worked a service job, even for just a little time, they’d realize how hard it is, and probably be a little more patient and understanding when they went out."
Where do you enjoy getting lost?
“Madrid. I can wander around Malasaña or La Latina for hours. Cool shops, great little restaurants and bars, pretty streets… there is always something to discover.”
