Jana Billiot is Chef de Cuisine of Restaurant R’evolution. She is both involved in community efforts and highly skilled at her craft, as she was highlighted as the Local Star Chef during the James Beard Taste America Dinner in New Orleans.
What do you love most about Your City?
The art. With food, festivals, music, antiques and galleries, there are so many different types of art being represented in such a unique fashion.
Favorite breakfast meal & restaurant?
Corned beef hash. Honestly, my favorite breakfast restaurant is Waffle House.
What are you doing at:
6:00 AM – Sleeping, hopefully, but I do have a one-year-old. Or I’m opening the restaurant for Sunday brunch.
10:00 AM – Chasing my one-year-old and trying to do all the day-to-day chores. Hopefully I’m getting a bit of time in the garden as well, before it gets too hot. Maybe taking a trip to the park.
12:00 PM - Favorite Power Lunch spot/meal?
Stein’s Market & Deli.
7:00 PM - If I’m not at work in the middle of dinner service, I would at home cooking dinner with the family. If the baby has a sitter, I’m having cocktails with friends at Hot Tin rooftop bar if we’re feeling fancy or at Bayou Beer Garden. I also might be on my way to a New Orleans Saints football game.
11:00 PM – Headed home from work if I’m not closing, eating dinner, watering the garden, having a night cap and catching up on Netflix. If I’m out with friends, I’m catching a show somewhere, probably on Frenchmen Street.
What drink do you need to get through the day and at the end (and how many)?
Whisky or bourbon, straight. It depends, one or two.
Most used App/Favorite Instagram Account?
Amazon Prime. I don’t do much on Instagram.

Where do you enjoy getting lost?
In a foreign country with no definite plans or anywhere to be with someone I love, but of course we aren’t in any danger or under any time constraints, etc.
