Mark Dym is Owner and Operator of Marco's Coal Fired (2 Locations in Denver) and Racca's Pizzeria Napoletana in Casper, Wyoming. I came to the restaurant business after a successful career in Financials, moving my family from South Florida to Denver and opening the first Marco's Coal Fired in June of 2008. Ten years later with 3 successful restaurants, I believe it's all about passion, the highest quality ingredients and consistency.
My Goal of the Day: My goal of the day is a question, “How can I best use the day?” No two days are ever the same, there are so many changing demands on your time as a business operator. It’s easy to get distracted or avoid the tough stuff. If I plan the day, the tough stuff gets done.
My Thought of the Day: Always a variation of Look at the Positive and Keep a good Attitude.
My Action of the Day: Every day I think of my actions in terms of “Is what I’m working on supporting my family, friends and staff?” It helps me keep on track. It focuses me and allows me to make the best decision.

What do you love most about Your City?
Denver, CO is wonderful in so many ways. I love that we get 300 days of sunshine, and from downtown you can be in the beautiful Rockies in about an hour. It’s also a real foodie town, we have so many talented restaurateurs, chefs and knowledgeable, adventurous eaters. Denver is also a really inclusive, supportive city, and I love that about it.
Favorite breakfast meal & restaurant?
More often than not, I eat breakfast at home with my wife, Kristy. I love the simple, delicious food she makes. When we do go out, we love Mary Nguyen’s Olive & Finch. They have great food in a casual, fun, inviting space.
What are you doing at:
6:00 AM – Drinking a whole pot of Coffee, reading emails and waiting for my beautiful wife to wake up! I also watch motivational videos every morning to get me ready for the day, and get my head in a positive frame of mind for the day.
10:00 AM - A couple of days a week I’m at Physical Therapy (getting Old is hard to do!) or Pilates. Other days I’m in various meetings for marketing or operations.
12:00 PM - Favorite Lunch spot/meal?
So many, but I do frequently go to Hillstone. I admire the simplicity of their menu, and the consistency of their product and service. Consistency for the guest is something I think is incredibly important in the restaurant business. Since they set the bar extremely high, it motivates me to do better.
7:00 PM - I’m usually at one of my stores, working the floor and talking to guests. On the few day’s I’m not, then I’m at home relaxing.
11:00 PM - Either reading (Novels or History), but more likely sleeping. I’ve been up drinking coffee since 6, I’m tired!
What drink do you need to get through the day and at the end (and how many)?
Pellegrino, endlessly all day long.
Most used App/Favorite Instagram Account?
I’m a Dinosaur, I actually still call people. So my most used “App” is actually the Call button! Otherwise, I love movies so I use Fandango all the time, and of course, Pandora.
What should everyone try at least once?
Marco’s Coal-Fired’s Cacio E Pepe pizza with Porchetta. It’s the most decadent, unique pizza and I’m obsessed with it. Bechamel sauce, three cheeses, savory Porchetta and butcher black pepper, what else could you want???
Where do you enjoy getting lost?
Italy. Every time I have the opportunity to go there is so much to explore. It’s a magical place to me, you can walk around a corner and be surprised by nature, art, history, architecture. It’s the most romantic place in the world, and you can’t beat the food and wine.
