What do you love most about NYC?
I love how chaotic and diverse this city is, It was love at first sight for me. I believe that every person has their own biological rhythm of life, mine perfectly harmonizes with the rhythm of New York City.
My favorite food is freshly baked bread and a proper steak done on a medium low temperature; Cant choose one over the other.
What are you doing at:
6:00 AM – I wake up and walk my best friend Carlos, my 3 yo Chipin. We live across the street from DOMINO park, love that place.
10:00 AM - I start planning the day out.
12:00 PM - One of the busiest times of the day, usually dealing with deliveries and food prep, organizing the schedule and task distribution among staff members.
7:00 PM - show time at CHEESEBOAT. I usually cook.
11:00 PM - This is usually when things slow down, I try to reflect on the day - what’s been done right and what may use some work. This is when I start relaxing..

Where do you enjoy getting lost in NYC?
I like discovering new bars around the city, that is my way of getting lost - by finding new things.
