Ilya grew up in the world of caviar. From the time he was 7 years old, he worked alongside his father in his business learning the trade from the ground up. After attending NYU and Pace University in New York, he decided to fully commit himself to the family business where he continued to grow the Caviar Russe brand in both retail and restaurant expansion. Today, Caviar Russe is the largest caviar importer to the U.S. and boasts a Michelin Star restaurant on Madison Avenue. Ilya is currently in the process of opening the first expansion of Caviar Russe at the Four Seasons Tower in Miami, Fl.
What do you do best?
My talent truly shines when I get to work with other people. My father always said that dealing with people is the hardest part of any business. I like to think this is my strength. The ability to see talent in another person and motivate them to perform to their best ability is really satisfying.
What makes you the best?
In my opinion there is no such thing as being “the best”. There will always be someone better than you, and someone coming up right on your heels. You must constantly continue to evolve, grow, and remain innovative in order to always stay ahead of the competition.
How will you stay the best?
By surrounding myself with great people and great talent! Everyone has a weakness, and that is okay. At Caviar Russe, we work together to build on everyone's talent to make sure that no single weakness will bring us down. I work every day to make sure all of our operations are as streamlined as possible, to allow for the greatest efficiency. Finally, expansion! Continuing to grow the Caviar Russe brand, which is already the best, will ensure that we remain the best around the world. First stop? Miami!
Having our restaurant recognized for a Michelin Star was truly an honor. This being my first venture in the world of hospitality, it was very exciting for me, and it was a testament to our entire team and the hard work, passion and dedication we have put toward the brand.
What are your aspirations?
Personal: Getting married to my amazingly beautiful and smart fiancée, and starting a family one day.
Business: Open our first expansion of Caviar Russe at the Four Seasons Tower in Miami followed by more around the globe!
Most challenging moment?
I find myself being challenged every day with something new. My biggest challenge at the moment is the development and construction of Caviar Russe Miami. It is incredibly exciting to build something from scratch. My passion for real estate and development has definitely been ignited.
What fascinates you?
The human resolve! The everyday fight that lies within each and every one of us is absolutely amazing. I am also extremely fascinated by the world of business. All the new companies and brands rising each day motivates me to do better and work harder!

I’ve been fortunate to have my father be my mentor in both life and business. Next to him, my friends who open my mind and help me think bigger. Of course my fiancé- Dina. Her belief in me is what fuels me on the great days and helps me get through the hard days.
I still have many places to visit but my love for New York City, Paris, and St. Barts is a love that will always remain.
