What do I do best?

I think I’m a very good multi-tasker. I don’t think I would be able to finish writing 3 cookbooks within 1 year, while keeping up with my article load, and still running a household as a working mother of 3. Plus, I always make sure to exercise 4-5 times per week as health is a priority to me.

What makes me the best version of myself?

When I work out regularly it helps minimize my stress, makes me happy, and keeps me fit. All these things make me a better version of myself as I am happier and more enjoyable to be around. I can also think more clearly when I feel good about taking care of “me first.”

What are my aspirations?

My business aspirations are to continue writing cookbooks until I have a shelf of my own at the bookstore (or a virtual bookshelf on amazon). I also love working on new, exciting projects and pushing my limits as a registered dietitian, best-selling cookbook author and consultant in my field.

As for my personal life, I am very content with my life. I have 3 beautiful, smart, healthy children, and am in a relationship with the most loving and motivating man. I am able to travel for both work and pleasure, and have time to both work and play.

My Biggest Success?

Besides my three children who will always be my biggest success is the fact that my second cookbook The Healthy Meal Prep Cookbook is a top seller. It climbed to number 31 on Amazon and has remained a best seller since its release in August 2017. I hope that my upcoming cookbook The Easy 5-Ingredient Healthy Cookbook: Simple Recipes to Make Healthy Eating Delicious inspires folks to cook more at home with my very simple to make, healthy recipes.

My Most Challenging Moment?

My most challenging thing in life is balancing my demanding work with my children’s busy schedule. Although I would like to be there for each and every game, concert, and class activity I just can’t do it all. On occasion I need to work or travel and miss events. It’s challenging to balance the two.

My Motto?

“Never say I can’t.”

I can do ANYTHING from changing a tire to cooking any dish to writing a cookbook in 5 weeks. Even if I don’t know or have never done something, I will figure it out and do it well.  I teach the same philosophy to my children and hopefully it will sink in that they can do anything they want and the word “can’t” isn’t in our vocabulary.

My Favorite People/Role Models?

There is no one person that I admire. I look at each individual separately and really do admire those who have a good work ethic and push themselves to the max. I love seeing those results come to fruition years down the line. Those folks inspire me, no matter who they are!

My Favorite Places/Destinations?

I recently visited Cape Town, South Africa where my boyfriend is from. It was the most amazing place, with the most delicious food and homemade wines. The sad thing is that Cape Town is about to be the first metropolitan city in the world who will have no water at all starting in April.

My Favorite Products/Objects?

My tennis racquet—I play competitive tennis in the US Tennis Association. I play several times a week and bought my all black professional grade racquet that I absolutely love.

My Current Passions?

Nutrition and healthy eating is my passion. I live and breathe it every day and hope to inspire and motivate others to love eating healthy and create healthier eating and lifestyle habits.
